Marion County grants continuance for Fish Hawk Spirits permit amid compliance concerns

OCALA, FL (352today.com) — The Marion County Board of County Commissioners granted Fish Hawk Spirits, a micro-distillery in the Westwood Acres North subdivision, a 180-day continuance to resolve compliance issues tied to its expired special use permit.

The distillery’s permit lapsed in December 2024, and staff had recommended denial due to unpermitted structures, a lack of required site plans, and septic limitations. Despite these concerns, commissioners gave the business until Feb. 17, 2026, to either make the required $250,000–$275,000 in upgrades or explore relocating to a more appropriate commercial site.

Commissioners praised the business but stressed urgency. “Our staff is doing their job, and we need you to pull your side of the cart,” Vice Chair Carl Zalak said.
